Gedcom stands for GEnealogical Data COMmunication.  It is a file format that is used to exchange genealogical data between different genealogy software programs.  A Gedcom file is plain text and contains genealogical information about individuals, and information that links these individuals together.  Most genealogy software will allow you to import or export your family tree in Gedcom format.
